Zoomers Healing Udon Soup

Ingredients: - 2 cups Vegetable Broth (Low-Sodium for a healthier alternative) - 1 pack of Vegan Udon Noodles - 1/2 pack of Soft Tofu - 2-3 tablespoons of Mutha Earth Zoomers Broth Powder - 1 tsp Garlic Powder - 1/2 tsp Powdered Ginger - 1 cup water - Choice of vegetables: I added Bok Choy but you could add onions, garlic, carrots, kale, etc! - Add some Siracha or Chilli Flakes for some spice!
Directions: To a medium pot, add Vegetable Broth, Zoomers Broth, Garlic Powder, and Ginger. Give it a quick stir, then set on high heat to boil. Once it hits a boil, add in your Udon Noodles, Bok Choy & Tofu. Bring the heat down to a medium-low and let simmer. Once your noodles are fully cooked, take the pot off the heat. They typically take only 3-4 minutes. If you like softer vegetables, add them in before the noodles. Add in the siracha or chilli flakes now ๐Ÿ™‚.
Pour into a bowl and enjoy! Itโ€™s such a fast and easy meal - and it will keep you full and energized for a long time! Itโ€™s one of my favourite meals as itโ€™s easy on the stomach. If you have other mushroom powders, you can add them in! Make it taste the way you love ๐Ÿค
